You have a 2000, so you're going to have three O2 sensors, one in each manifold and one behind the cat. If you go to an aftermarket "high-flow" cat, it shouldn't freak the third sensor out, but if you go with a straight pipe or something like that, that sensor code will need to be turned off or the senors will need to be replaced by a sumulator.
And when refering to up-stream and down-stream sensors. The up-stream is the manifold sensors, down-stream is behind the cat.
MOST V6's have only three sensors ... I don't think I've ever come across one that needed a sensor in the front and in the back ... on the V6 cars, but anything newer than 2000 could.

CARSOUND-91006 is the cat you need.
( of course, going with Pacesetter headers, a 3" Catco cat, and an LT1 Magnaflow Catback is really the way to go.
