They don't keep record of it.
You get the ticket. You go to court. You ask the judge for driving school. The judge asks you if you've taken the course in the past year (some judges ask if it's been two years). You say, "no". The judge dismisses the ticket. The judge gives you the paperwork to sign up for the class.
Since they just dismiss the ticket, it's no different than if you plead innocent and get out of it. They don't keep up with why the ticket was dismissed, just that it was dismissed. So the judge asks you if it's been however long, but he has no way of knowing if you've taken the class, when, or how many times.
